We’ve partnered with AIB to curate a series of events to support you in doing what matters to you, and the very first ‘Culinary Delights’ evening took place on Monday, November 4, in Coppinger with chef Daniel Hannigan and wine expert Brigid O’Hora. Here’s how we got on…

On Monday, November 4, AIB and IMAGE Media hosted our first event in the AIB Keep Doing What Matters series. With the series, AIB wants to inspire you to feel what it’s like to embrace life fully and prioritise the things you love – into retirement and beyond.

AIB Keep Doing What Matters - Culinary Delights

The first event, titled Culinary Delights, allowed guests the opportunity to experience the reimagined and reinvented Coppinger restaurant, which has just reopened in the heart of Dublin. It’s rare that a favourite city centre eatery reopens and the new version is even better than the original. But this is exactly what seasoned restaurateurs Marc and Conor Bereen have achieved with Coppinger 2.0, where they have recreated the original restaurant’s iconic buzz, elevated by head chef Daniel Hannigan’s mouth-watering sharing plates menu.

On the evening, guests enjoyed a gastronomic four-course dinner, created by chef Daniel Hannigan, who was joined by IMAGE Editor-in-Chief Lizzie Gore-Grimes to guide guests through each course, sharing insights into each exquisite dish and giving guests the opportunity to gain an intimate understanding of the ingredients, techniques, and inspirations behind Daniel’s style of cooking.

Menu highlights included shared small plates with garlic and chilli gambas, octopus rice, lamb belly flatbread, and cauliflower cheese, followed by the incredible 9 oz sirloin steak, crispy Ballymakenny spuds, and to top it all off, a tasty lemon posset with gin and tonic mousse.

To elevate the evening further, wine expert Brigid O’Hora (aka Brideys Wine Chats) led an informal and engaging wine pairing and tasting session, with a bespoke wine chosen to complement each course.

AIB supports customers by offering financial advice at all life stages so you can keep doing what matters to you. To book a chat with an AIB advisor to get real guidance on how to use savings, pensions, and investments to build your financial future, simply visit aib.ie/make-a-plan.
